Our Homeschool Week in Review

Last week, in our Homeschool Week in Review, I shared how we had had a minor cold. Well, this week, we had a major cold. It's been a bad one.I'm pretty sure it wasn't the flu. It was most definitely the worst cold we've had all winter. And we've had a lot. sigh....

So, this homeschool week was pretty much a bust. Here's the picture I shared for Wordless Wednesday this week:

3 days + 4 sick kids + 2 sick parents = one trashed living room!

We are finally on the mend. The living room, however, is not. yet! I insisted that we all go out and sit on the porch in the sun for at least 15 minutes this afternoon. I read aloud some of the Purim chapter of Jewish Holidays and Festivals A Young Persons Guide to the Stories, Practices and Prayers of Jewish Celebrations. We also started reading Misty of Chincoteague.

Here's the kids spread out on the front porch:

They decided they didn't want to show their faces. The little one dragged his pillow and blanket outside. lol


After we came in, 3 of the kids decided to go back out. One decided to draw a picture of her sister. It took some doing, but she finally agreed I could share it here. I think she did great!

Left-Over Stir Fry

Stir-Fry is a great way to use up leftovers.  I'm feeding a lot of hungry people, so you probably won't need to make as much as I do. Here's how I make it.

Tonight, I used: 
2 packages of frozen stir-fry veggies - You can use whatever left over vegetables you want. We rarely have leftover vegetables, so I like to keep these frozen veggies on hand.


I cooked these veggies in a tablespoon or so of oil. If you using less veggies, you can use less oil.


Because I have to make a lot, and I don't have a skillet that large, I take the veggies out, then cook the rest of the ingredients.

8 cups left over rice - How does one have 8 cups of left over rice?! I plan ahead, and make extra rice when we're having rice for supper. I also like to keep cooked rice in the freezer.

3 cups of cooked chicken - what ever meat you have left-over, use less or more, whatever you have
1 tablespoon of oil 


I heat the rice and meat in oil until warm.


When they are warm, I push the rice and meat to one side. then I scrambled 3 eggs. If your using less rice, use less eggs. You can leave the eggs out, but they make a nice filler, especially if you don't have a lot of leftover meat.


Once the eggs are cooked, mix the eggs into the rice. Add  Soy Sauce to taste. I used about 1/3 of a cup tonight, as that's all I had.


If your making a smaller amount, your vegetables will be mixed in with the rice. I have to mix the veggies and the rice mixture in a large bowl.


We love stir-fry, and it's a great way to use leftovers. What's great about stir-fry, is the family doesn't even recognize the left-overs. It's a new dish to them. And I can feed lots of people for very little.
